Blueberries and Chia Seed Fluffy Pancakes

My daughter has an obsession with blueberries lately. She wants to eat them everyday, all day long! That´s why I came up with this recipe. You can substitute the blueberries for strawberries, raspberries or any berries that may be more appealing to you.

It is free of refined sugar. The sweetness comes from the blueberries, bananas and dates. It´s super filling and is packed with goodness so you can indulge without regretting later on.



Cook Time: 10 minutes
Total Time: 15 minuttes.
Serves: 4

1 3/4 cups whole wheat flour.
1 3/4 cups milk
1 3/4 cups blueberries
1 ripe banana
3 dates pitted
2 tsp baking powder
2 tbsp chia seeds
1 large egg



  1. Place all ingredients in blender and blend until smooth.
  2. Pour about ¼ cup batter onto the griddle; cook for 2-3 minutes and until bubbles are forming over the top of the pancakes. Flip and cook for about 1-2 minutes. Continue with remaining batter.
  3. Serve with favorite toppings and enjoy!

RECIPE NOTES:  You can easily replace the whole wheat flour  with gluten free oats, and the milk with non dairy options. Sweeten with maple syrup , honey or brown sugar instead of dates.

This is perfect made on the weekend for brunch. Leftovers are great for easy, healthy breakfast throughout the week.

Frozen berries can be used in place of fresh berries.
